Street Corn Quesadillas with Chile Colorado Beef

Ingredients

Ingredients

  • 1 EZ Bombs Chile Colorado Bomb
  • 1 cup water
  • 2 lbs ground beef
  • 1 diced tomato
  • 1 diced potato
  • Chile Colorado sauce, about ½ cup per 1 lb of ground beef

Instructions:

  1. Dice the potato into bite-sized pieces.
  2. Cook the potato over medium heat until softened to your liking.
  3. Add the ground beef and cook until it is about 50–70% done.
  4. Blend 1 Chile Colorado Bomb with 1 cup of water for 2 cycles, or until fully blended.
  5. Add the diced tomato and about ½ cup of Chile Colorado sauce per pound of ground beef.
  6. Stir well and continue cooking until the beef is fully cooked and the potatoes are tender.
  7. Serve hot with Mexican rice or your favorite sides.

Pairs Well With:

  • Mexican rice
  • Avocado salad
  • Refried beans

EZ Tip:

For a saucier picadillo, add a little extra Chile Colorado sauce while simmering.
