Instructions:
- Dice the potato into bite-sized pieces.
- Cook the potato over medium heat until softened to your liking.
- Add the ground beef and cook until it is about 50–70% done.
- Blend 1 Chile Colorado Bomb with 1 cup of water for 2 cycles, or until fully blended.
- Add the diced tomato and about ½ cup of Chile Colorado sauce per pound of ground beef.
- Stir well and continue cooking until the beef is fully cooked and the potatoes are tender.
- Serve hot with Mexican rice or your favorite sides.
