Chile Colorado Lean Beef Meal-Prep Bowls

Ingredients

- 1 EZ Bombs Chile Colorado Bomb
- 4 lbs chuck roast, trimmed, cut into 1½–2 inch chunks
- 1½ cups water
- Cooked rice or cauliflower rice (~¾ cup per bowl)

Deep red chile colorado, portioned for the week. One hour hands-off in the Instant Pot, and the all-day sauce is already inside the bomb.

Instructions:

  1. Cut the beef evenly. Trim the hard fat cap and cut the chuck into 1½–2-inch chunks — even pieces cook evenly, and chunks this size shred into perfect bowl-sized strands.
  2. Load the pot. Beef in first, Chile Colorado Bomb on top, then pour the 1½ cups water around the sides.
  3. Pressure cook. Lid locked, valve to Sealing, HIGH pressure for 60 minutes.
  4. Let it rest before you vent. Let the pressure release naturally for 10–15 minutes before opening the valve — that rest is what keeps shredded beef juicy instead of tight. (Quick release works if you're rushed.)
  5. Check, then shred. A chunk should fall apart when pressed with a fork; if it resists, pressure cook 10 more minutes. Shred the beef right in the pot with two forks and stir it through the deep-red sauce.
  6. Skim if you want it leaner. A few passes with a spoon takes the surface fat off — easy calorie lever, your call.
  7. Cool, then portion. Rest 15–20 minutes uncovered (fridge within 2 hours). Spoon rice into 5 containers and top with saucy beef.
  8. Reserve 2 cups of beef for the breakfast scramble recipe — that's next week's mornings handled.

Meal-prep portioning:

One cook = a full pot, ~8 servings: portion 5 weekday bowls, freeze the rest. Swap cauliflower rice in any bowl to keep it low-carb.

Slow-cooker path: same beef + bomb + 1½ cups water, high 6 hours or low 8 hours — set it before work, shred at dinner.

Meal-prep storage (general USDA guidance): refrigerate cooked portions up to 3–4 days; freeze anything beyond that.
